A glance at the Biryani tradition in India

India has a very rich food culture. There are different cuisines in India which are tasty and healthy at the same time. Biryani is one of the most popular Indian cuisines. Hyderabadi biryani, chicken biryani, mutton biryani, vegetable biryani, dum biryani, handi biryani are some of the most loved ones. Two of the best biryani recipes are given below;

Veg biryani recipe

Ingredients

  • 3 tbsp ghee
  • 1 potato
  • 2-inch cinnamon stick
  • 5 cloves
  • 4 cardamom
  • ½ tsp cumin seeds
  • 2 tsp biryani masala
  • 1 tsp ginger-garlic paste
  • 5 beans
  • ¼ cup peas
  • 1 carrot
  • 2 bay leaf
  • 2 tbsp saffron water
  • 3 mushrooms
  • ½ tsp pepper
  • 1 cup curd
  • ½ tsp turmeric
  • 1 tsp Kashmiri chilli powder
  • 1-star anise
  • ¼ tsp cumin powder
  • 1 medium onion
  • 6 tbsp coriander leaves
  • 20 mint leaves
  • 10 cauliflower
  • 6 tbsp onions paste
  • 1½ cups basmati rice

Steps

  • In a cooker, heat ghee and sauté the spices together.
  • Now, add onions and ginger-garlic paste.
  • Next, add other vegetables and fry well.
  • Add the curd and keep the flame low.
  • Add all the spice powders and salt. Mix all well.
  • Mix fried onions, mint leaves, and coriander leaves
  • Spread soaked basmati rice and sprinkle salt and biryani masala.
  • Add fried onions, mint, and coriander leaves.
  • Then pour ghee and saffron water.
  • Add some water and simmer for 30 minutes.
  • Serve it hot with raita.

Mutton biryani recipe

Ingredients

  • 250 grams Mutton with bone
  • 1 cup basmati rice
  • 1 teaspoon red chilli powder
  • 1/2 teaspoon turmeric powder
  • 2 tablespoon peanut oil
  • 2 cardamom
  • 2 cloves
  • 1 medium tomato
  • 1-inch ginger
  • 3 green chillies
  • 10 mint leaves
  • 1 medium onion
  • 1 teaspoon coriander powder
  • 5 sprigs coriander leaves
  • 8 cloves garlic
  • 1 teaspoon salt
  • 1 stick cinnamon
  • 1/4 cup plain yoghurt
  • Juice of half a lemon

Steps

  • Soak the rice in water for one hour or two
  • In a cooker, add mutton pieces, salt, coriander powder, turmeric powder, and red chilli powder.
  • Add water and cook for 20 minutes. After 15 whistles remove it from flame and keep it aside.
  • Heat oil in a pan and add all the spices, cloves, cinnamon, and cardamoms.
  • Now add onions and fry them. Next, add tomatoes, yoghurt, ginger-garlic paste, and green chillies.
  • Mix all oil till the oil appears. Now, add the rice. Mix the rice well.
  • Add the meat pieces. Now, add lemon juice, coriander leaves, and mint leaves. Add some water.
  • Cook it for 10 minutes and serve it hot.
